I couldn't decide what cupcake to make this weekend for 4th of July, and then I saw a tweet that said there wasn't anything more American then Apple Pie. How true! So I set out to make a cupcake that tasted like Apple Pie!
Ingredients:
Cake
1/2 cup of butter
1 individual size applesauce
3/4 cup granulated sugar
1/3 cup brown sugar
1/4 cup of sour cream
1/2 cup of milk
1/2 tsp of cinnamon
1/2 teaspoons of vanilla
1/2 teaspoon of baking soda
1 teaspoon of baking powder
1/4 teaspoon of ground cloves
Bake on 355 degrees for 20 minutes. Once cool, core the cupcakes for a filling. How to: gently scoop out the middle portion, creating a small bowl for the filling.
Filling:
2 granny apples /cut and sliced into small pieces
1 tablespoon of cinnamon
1/2 cup water
1/2 cup of apple juice (I used sparkling apple cider)
1/2 cup of brown sugar
Bring to a boil then reduce to a medium simmer for about 20 minutes, allowing the apples to cook to a soft filling.
Make sure you watch this mixture, my first one burned! Let cool, then add to cupcakes.
Frosting: I didn't want to do a full buttercream frosting, I wanted a small topping frosting that would resemble an ice cream/whip topping.
1/2 cup unsalted butter at room temperature
1 cup of powdered sugar
1 tsp of Vanilla
1 tsp of cinnamon
After your filling is cooled and placed in the cupcake, top with frosting. Enjoy!
